Joy is originally from Brazil, and has re-joined the family having worked at Brasserie Zédel for several years, before exploring pastry operations at Four Seasons Hotel in London and also Claude Bosi’s kitchen at the George Hotel in the Isle of Wight. When she is not creating magic in our kitchens, she likes to explore London’s dining scene with her husband, who is also a chef.
